It’s a cosy thick soup and colouring book kind of day today 🤗🌧 Soups are one of my favourite things to make. You can throw absolutely anything in there, lots of it too, and it’s an easy, warming and satisfying meal 🤤
This one is coconut, chilli and sweet potato soup! Spices are jam packed with antioxidants and chilli is a fantastic and quick way to boost up your metabolism. Sweet potatoes are a great source of Vitamin A (essential for good eye-sight and youthful skin) and I’ve also added in a couple of peppers which - fun fact - have twice the amount of vitamin C as an orange does! Vitamin C is one of the most important vitamins we consume as that is what protects us against common infections such as colds meaning we are less able to fight off the bigger, more worrying infections!
TOP TIP: I always add some sort of protein to my soups. In this case, I added chickpeas which when blended give quite a nice, buttery taste and texture.
